Leftover turkey stew
This easy one-pot stew is the perfect recipe to use up all those leftovers from your Christmas dinner. Have yourself a winter warmer for lunch or dinner in just three steps.
Ingredients
- 2 onions, finely chopped
- 1 apple, cored and chopped
- 2 tbsp olive oil
- 1 tsp dried sage, or 5 sage leaves, chopped
- 2 tbsp plain flour
- 300ml vegetable or chicken stock
- 2 tbsp wholegrain mustard
- 2 tbsp runny honey
- 400g-500g leftover turkey, shredded
- 350g leftover vegetables such as roast potatoes, parsnips, celeriacs and carrots, broccoli and sprouts, chunkily diced
Method
Heat the oil and fry the onion and apple until softened in a casserole or deep pan
Add the sage, then stir in the flour and gradually stir in the stock followed by the mustard and honey
Bring up to a simmer and stir in the turkey and roast vegetables. Cover and gently simmer for 15 minutes until the stew is piping hot. Season to your liking and enjoy with some crusty bread
