Indulgent Christmas pud ice cream

Christmas pudding ice cream
Rather than chucking the leftovers of your Christmas pudding, use it to make this super easy ice cream and continue the festive feeling.

Ingredients

  • 1 litre tub vanilla ice cream (slightly softened)
  • 200g crumbled leftover Christmas pudding
Add the vanilla ice cream to a food processor and whizz until it’s smooth
Fold in the Christmas pudding and put into a freezer-proof container
Freeze for at least 2 hours. Once ready, serve on its own or with a dessert
