Raspberry trifle

raspberry trifle.
A messy classic that's sure to be a crowdpleaser!


Serves 6 - 8

  • 350g frozen raspberries / summer fruits
  • 300g Raspberry Jam
  • 1 x large flan case
  • 100g crushed walnuts
  • 500g fresh custard
  • 300g whipping cream
  • 50g flaked almonds


Defrost the frozen fruit overnight or carefully in a microwave.

 Melt your jam in a small saucepan until runny. Leave aside to cool.

Break up the flan case into small pieces and place in a large bowl. Add the summer fruits, melted jam and crushed walnuts to the flan pieces and mix well.

Whip your cream and pour the fresh custard over the fruity flan mix, topping with the cream.

Sprinkle the flaked almonds on top of the cream and chill in the fridge before serving.

This is a great recipe for those who may not consider themselves master chefs. Get the kids involved as you all get stuck in to the messy mixture! Trifles can be great for clearing out those ingredients you've got in the cupboard but don't know what to do with.
