Red lentil, chickpea and tomato curry

Chickpea and red lentil curry

Like everybody, I’ve been trying to use up the food in my cupboard before buying more groceries. It’s amazing what you can find in the mysterious, untouched depths of the cupboard - I highly recommend it if you haven’t already…

This is such a versatile dish, whether you have a few mouths to feed in the family, you’d like to cook for a neighbour in need or you can batch freeze to enjoy another time. I cooked with what I had in the kitchen, so feel free to swap out any ingredients and add spice to suit your taste. 


  • 1 tbsp oil - I used rapeseed but use whatever you have
  • 1 onion, finely chopped
  • 2 garlic cloves, thinly sliced
  • 1tsp cumin
  • 1tsp chilli powder
  • 1tsp curry powder
  • 1tsp ginger paste
  • 2 tbsp tomato puree
  • Salt and pepper for seasoning
  • 150g red lentils, rinse
  • A handful of cherry tomatoes
  • 400g tinned chickpeas, drained and rinsed
  • 400ml coconut milk
  • 700ml of vegetable stock
  • 300g rice


Heat the oil in a heavy-based saucepan over a medium heat. Add the onion and the garlic and gently fry for around 10 minutes or until they’ve softened and begin to colour
Stir in the red lentils, ginger paste and the spices and cook for around 3 minutes. Stir frequently.
Add the salt, pepper, tomato puree, vegetable stock, tomatoes and chickpeas. Bring to the boil, reduce the heat and let it simmer for about 20 minutes or until the lentils and chickpeas are cooked through.
Once the stock has reduced down, add the coconut milk and stir thoroughly until combined. Simmer for another 30 minutes. Again, check on it frequently and adjust the heat when necessary.
Cook whatever rice you have to the instructions on the packet, and if you can’t get hold of rice, this curry is also delicious served with a baked potato or naan.
