Meet Syabira

Syabira won the Great British Bake Off in 2022 and was known for her Malaysian twists on classic British bakes. She’s put together a simple mince pie shortbread recipe that’s super easy to make. It takes 10 minutes to prep and once the dough has chilled, just 10 minutes to bake too!

Ingredients

Makes 12 shortbreads

  • 77g icing sugar 
  • 194g unsalted butter (room temperature) 
  • 40g mincemeat
  • 220g plain flour 
  • 110g cornflour 
  • Zest of 1 whole orange 
  • Zest of 1 whole lemon 
  • 30g granulated sugar 

Method

Step 1

In a bowl, cream the sugar and butter until pale. Add the mincemeat. 

Step 2

Add the dry ingredients and mix just until combined into a dough.

Step 3

Roll the dough into a cylinder about 5cm in diameter. Wrap it with wax paper or cling film and refrigerate overnight or for 2 hours. 

Step 4

Mix the lemon and orange zest with the granulated sugar.

Step 5

Cut the dough into pieces about half a centimetre thick, dip them into the zesty sugar, and place them upside up on a baking tray lined with baking paper or a silicone mat. 

Step 6

Bake until slightly golden on the sides (10-13 minutes).
