Ingredients

Makes 12 muffins

  • 120g apple sauce
  • 100g fat free greek yoghurt
  • 40ml sunflower oil
  • 2 eggs
  • 240g self-raising flour
  • 1tsp baking powder
  • 90g caster sugar
  • 60g white chocolate chips
  • 100g raspberries, fresh or frozen

Method

Step 1

Heat the oven to 180C and line a muffin tin with 12 paper cases. 

Step 2

Whisk the apple sauce, yoghurt, oil and eggs together in a bowl and in a separate bowl stir together the self-raising flour, baking powder and caster sugar. 

Step 3

Stir the wet ingredients into the flour mix until just combined, then stir through the chocolate chips and most of the raspberries. 

Step 4

Divide the mixture between the muffin cases then push the remaining raspberries into the top. Bake in the oven for 20-25 minutes until the muffins are golden and a skewer comes out of the centre of the muffin clean.
