Air Fryer Lemonade Scones by Clair Kirk

This recipe was submitted by Clair Kirk as part of our Big Lunch Recipe Search competition. “The inspiration for this recipe came form the Air Fryer Cooking course that I ran for eight ladies for five weeks. The ladies set me challenges to find different recipes each week that they could do in class but more importantly make at home for their families. We are cooking on a tight budget, so its good for us at The Pantry to know we can share together and bake something very nice that everyone appreciates. Just a little treat!”
Ingredients
Makes 12-16
- 525g Strong white flour
- 5tsp baking powder
- 70g caster sugar
- 300ml sour cream
- 185-200ml lemonade
- zest of a lemon
- milk for brushing
You’ll also need…
- plain pastry cutter about 5.5 cm
- greaseproof paper for each basket – but make sure it is 1cm smaller than the plate to allow the air to circulate
- air fryer
Method
Step 1
Combine the flour, baking powder, and sugar in a large bowl. Make a well and add the sour cream, lemon zest and lemonade (start with 185ml and add more if a little too dry). Using a flat bladed knife, gently mix together to form a soft dough.
Step 2
Put onto a lightly floured board or sheet. Gently knead to a smooth dough (about 30 seconds) to about 2.5cm high Dip the cutter in some flour and press out the scones.
Step 3
Place in the baskets, brush with milk and put in the air fryer at 170 degrees for 15 mins. If the scones are too thick turn them over and cook for another 5 mins at 170.
Step 4
Allow to cool and enjoy!
