Cheese Straws by Ian Woods

“This recipe was passed to me by Grace, a fellow resident at my mother-in-law’s care home. She in turn had collected it from a friend Anne Wood in 1961.

This – and other recipes – collected by Grace are in a hand written book she gave me for Christmas 2023.

It is a simple, tasty recipe that has been enjoyed for over 60 years and will be enjoyed for many more.”

Ingredients

Serves 10

  • 2 ozs plain flour
  • 2 ozs butter
  • 3 ozs freshly grated Parmesan cheese
  • 1 egg yolk
  • pinch each of salt and cayenne pepper

Method

 

Step 1

Preheat your oven to 200 degrees.

Step 2

Sift flour and seasoning together, then rub in the butter. Mix in the cheese.

Step 3

Mix to a stiff dough with the egg yolk.

Step 4

Roll out to about 1/8 inch thick.

Step 5

Cut into narrow strips about  1/4 inch by 2 inches

Step 6

Place on baking trays and bake in a hot oven for 5-7 minutes.
