Fantastic Fishcakes

Try these delicious fishcakes at your Commonwealth Big Lunch


  • 1lb salted cod
  • 1 large onion finely chopped
  • 1 scotch bonnet pepper finely chpped
  • 1 cup parsley finely chopped
  • 1 cup spring onions finely chopped
  • 1 kg plain flour
  • 1/4 cup baking powder
  • 1/4 cup pepper sauce
  • 500ml soda water

Makes around 45 fishcakes - great for a party!


Soak the fish overnight in cold water. Drain, rinse and then boil it in hot water for 20 minutes.

Remove from the water and clean the fish, taking care to remove any skin and bones.

Combine all of the other ingredients (except the plain flour) in a bowl.  Add the fish and mix well.

Scoop out a ball of the mixture and shape it into a patty, then gently roll it in the plain flour. Repeat until you have lots of small fish cakes.

To fry, heat some vegetable oil in a pan until hot. Carefully add the fishcakes one at a time and fry for about 5 minutes, turning over halfway, until they are cooked through and crispy.
